Lightly toasted bread with a soft center, thin peppery pork belly, pickled carrots, herbs, and jalapeño. The pork leans slightly sweet and stays the focus because this version skips butter and pâté.

Chewy brown rice with large pieces of brisket, egg, green onion, fish sauce, and noticeable wok hei. The brisket flavor carries through the dish, though our order was on the saltier side.

Warm woven rice-noodle sheets with soft, sweet grilled pork sausage, lettuce, herbs, pickled vegetables, crispy garlic, and sweet chile fish sauce. The fresh crunch and soft noodles made this the most layered dish of the visit.

The baguette is light, extra-crispy, and never dry. The #1 comes packed with four kinds of meat, pate, and pickled veggies, balanced, flavorful, and always hits the spot.
